2016 Fleurie-Poncié

Vineyard: From 80 year-old goblet trained vines planted at the top of Poncié vineyard, one of the five celebrated vineyards along the ridge high above the village of Fleurie.

Fermentation: Inspired by Jules Chauvet’s scientific writings, the hand picked clusters were placed in a concrete vat for three weeks with no crushing, pumping or plunging of any kind, the grapes undergoing what Chauvet called a fermentation aromatique. After 21 days, the clusters were pressed and finished fermentation in tank by indigenous yeasts before nine months in old barrels. Bottled unfined and unfiltered. Tasting Note: Light, smooth, very convincing and totally charming. Note written from memory so hardly detailed but this is a wine made by Andrew Nielsen according to the principles of the much-admired Jules Chauvet. Chauvet clearly knew what was what”.
