Vineyard: From a 25 year-old parcel of Chardonnay on the outskirts of Péronne, considered the best part of the Mâcon-Villages appellation; north of Pouilly-Fuissé, south of Uchizy, with the vineyards of Viré-Classé bordering on the east. Planted in clay/limestone soil, the fruit from this part of the Mâcon-Villages appellation tends to keep it’s acidity, due to a cooler microclimate, resulting in bright, fresh wines.
Fermentation: The grapes were harvested, pressed without SO2, then chilled to 8C in order to settle the solids from the juice. The oxidised juice was then racked along with the best solids to old barrels, stainless steel and some younger, large format barrels. We selected the brightest and most juicy barrels after 5 months. The resulting blend was very lightly fined and filtered and lightly sulphured before packaging
